Located in the heart of Auckland CBD’s business district, Hugo’s Bistro offers true all-day dining, from early morning coffee and inspired lunch service, through to afternoon Aperitivo with friends and sophisticated, European-inspired evening fare.
Beautiful ingredients are simply but thoughtfully prepared over our open charcoal fire, with a lighter style of classical cooking made with exceptional New Zealand produce.
Our historic Shortland Street dining room blends luxury and subtlety, with spots perfect for a morning perch for exceptional coffee and cosy nooks for intimate dinners.
HEAD CHEF – ALEX LLEWELLYN
Alex Llewellyn took over the pans at Hugo’s Bistro at the start of 2023, bringing with him wealth of experience in New Zealand, Australia and Japan.
After an apprenticeship at Sails Restaurant in Auckland he left New Zealand and travelled around ski fields, until meeting his partner Steph and relocating to Sydney. A decade in Sydney shaped Alex’s cooking style; the ready availability of different produce and European and Asian products was inspiring to a young chef.
Stints at North Bondi Italian, Buon Ricardo, Fratelli Fresh, Vini, 121BC and Berta followed; all great lessons in regionality and the historical and cultural aspects of food in Italy. Ester then provided an education into cooking with fire, along with incorporating Chinese and East Asian techniques and flavours. His time at Moonacres Kitchen heightened his interest in sustainable produce and kitchen farming. These experiences come together at Hugo’s Bistro where Alex creates seasonal, ever-changing dishes with a focus on high-quality produce and our charcoal grill.
